Mini Caramel Cheesecake Bites

Each cheesecake is 10mg
Takes 20 minutes to prep, 20 minutes to bake, and 3 hours to cool.


  • 1 sleeve graham crackers (9 graham crackers)

  • 3 tablespoons brown sugar

  • 5 tablespoons unsalted butter - melted

  • 8 ounces cream cheese - room temp

  • 1 large egg

  • 1/4 cup sugar

  • 1/4 cup sour cream

  • 1 teaspoon vanilla extract

  • 1 tablespoon Madre butter - melted

  • Store-bought caramel sauce


  1. Preheat oven to 350

  2. Line a 12 cup muffin pan with liners

  3. Put the graham crackers into the bowl of a food processor and add in the brown sugar and butter. Process until it has the texture of coarse sand.

  4. Spoon the cracker mixture equally into the muffin liners and press to make them into a crust like shape, taller around the edges and shallow in the center.

  5. Wipe out the food processor and add in the cream cheese, egg, sugar, sour cream, and vanilla. Process until smooth, scraping down the sides as needed.

  6. Add in the Madre butter and pulse until combined.

  7. Spoon this mixture equally into the muffin liners.

  8. Bake for 20 minutes until set. Remove from oven.

  9. Allow to cool for 30 minutes on the counter, and 2 and a half hours in the fridge.

  10. Top with caramel sauce before serving.
